And in the morning, I'm making waffles!

Keith and I LOVE waffles, especially Keith. All I have to do is make some whole wheat, homemade waffles in the morning and I am queen for the day. Well, in reality I am always queen for the day, but when I make waffles he thinks I am extra queeny. Waffles around here are a big deal.

Charlie can't have my homemade waffles. This has bummed us out a bit. Food has a lot of emotion connected to it. Saturday mornings growing up always included my dad's pancakes, with lots of homemade raspberry syrup. On infrequent occasions the pancakes would be replaced by my mom's crepes stuffed with her special strawberry filling. These food memories are filled with warmth and love for me. It goes way beyond the food. Waffles have become that special Saturday morning breakfast for us and I have really wanted to give Charlie some warm, love filled, waffle memories.

So for the last several weeks I have been prepping to make PKU approved waffles and have been a bit worried about it. I found a recipe at this sweet blessing of a website, mail ordered a bucket of wheat starch, tracked down xanthan gum, and hoped for the best. Low protein baking recipes are notorious for being finicky.


Would you hold it against me if I told you that I teared up a bit when I sampled that first waffle and it was great? And then again when Charlie LOVED them (especially topped with a bit of applesauce)?

I know it is really not that big of a deal in the grand scheme of things, and that if he never had waffles he would be okay. I also know that some people have it a lot worse off than Charlie. All the same, this holiday season I am thankful for little things like waffles.

I know you plan to bring some of his flour when you come. We will make crepes!! I have the ENERG Egg Replacer already. It has .05 Phe in 1 1/2 tsp. which replaces one egg.

This was wonderful, you totally got me crying. Yes, of course you should have teared up. I want to tear up every time I make something and it doesn't taste like a pile of bricks, my poor family.
